Pomegranate juices can be produced by squeezing (halves of) the whole fruit or by pressing previously separated arils. The two types of juices are likely to differ in flavor and in anti-oxidant contents.

We aim at producing either refrigerated or ambient-stable products. The preparation of pomegranate juices encompasses the following steps: (a) fruit washing and disinfection, (b) on-line package-forming and package sterilization (e.g. PET, Tetra-Pak), (c) juice extraction, (d) finishing (screening, pulp and seed removal), (e) juice thermal processing (pasteurization/sterilization), (f) aseptic filling operations, and (g) refrigerated storage and distribution. The safety of the process will be monitored in accordance with a previously established Hazard Analysis and Critical Control Point (HACCP) plan.
